Appreciated since ancient times, chocolate is a refined delicacy for every festive moment. The history of cocoa dates back to the pre-Columbian civilizations of the Maya and the Aztecs, who used it as a beverage. In the 17th century, cocoa began to be appreciated at the royal courts of Europe. The Dutch chemist Van Houten is credited, at the beginning of the 19th century, with discovering how to process cocoa beans. The first Italian chocolate houses originated from the pastry-making tradition of Turin: Caffarel in 1826 and Venchi in 1878. Thus began the modern era of chocolate.
